Keep Growing Through Winter: Simple Crops That Thrive in the Cold

Winter might be closing in, but your garden doesn't have to stop producing. A bit of planning and the right crops will keep fresh greens coming even as frost hits.

Winter might be closing in, but that doesn't mean your garden has to stop producing. With a bit of planning and protection, you can keep fresh greens coming even as frost hits.

Winter Vegetables and Overwintering

You don't need a heated greenhouse to enjoy winter harvests. A few smart choices and a little insulation will keep your beds alive and your kitchen stocked.

This week's key tasks:

  • Sow cold-tolerant greens like spinach, kale, and mizuna under cover.
  • Use cloches or fleece tunnels to protect existing crops.
  • Bring potted herbs and tender plants indoors to a bright, cool spot.
  • Check overwintering garlic and onions for early signs of rot or pests.

Pro Tip

If you're short on space, grow winter salad mixes in shallow trays near a sunny window. They'll regrow after each cut.

Your Gardening Questions Answered

Q: Can I still start garlic in November?

A: Yes, it's ideal timing. The cold period helps form strong bulbs by spring. Plant each clove twice its depth and keep the soil moist but not wet.

Bubble Wrap Insulation for Raised Beds

This Week's Tip

Lay old bubble wrap or cardboard under raised bed lids to insulate the soil. It keeps roots a few degrees warmer and extends growing time.
